  • Foxxy, I am disabled myself and can't stand for very long cooking things.

    I can tell you what works for me, but it might not work for you.
    I don't have one of those perch stools, which I keep being told I should ask for. I do have a "nicer dicer". This has been much apprecciated by the children in the family, because the veggies I prepare can now be cut much smaller. I take all my veg through to the dining table, where I can sit and prep all the veggies, without worrying about me slowly sinking to the floor.

    Only recently I have acquired a remoska( through freecycle, but encouraged to ask by the huge reviews on this forum). I prepare the food, meat, veg and whatever at my dining table(two steps from the kitchen door) and use a timer to remind myself when to go back and check on the cooking in the pot, so I'm not standing too long.

    Tonight we had a sausage casserole (cooked in remoska) with cabbage and sweetcorn and mixed root mash(hubby drained and mashed the root veggies), my total standing time about 10 minutes.

    What about your OH, as he's the "picky eater", could he maybe cook a bit more:confused:

    Hello Foxy - maybe a Slow Cooker would be a good idea for you. You could prep your veggies while sitting down and then just put everything into the pot along with the meat and let it 'do it's thing' for a few hours. No danger of overcooking/burning the meal either.

    Personally, I'm a fan of pressure cookers as well, but in your case you would quite possibly find one rather heavy to lift and open.

    If you could find space for a freezer (I've got two in the dining area of the kitchen and one in the kitchen part), I'm sure that would be a great help to you. With the Slow Cooker, you can cook extra portions - one for now and some to freeze. I freeze in one and two portion size containers. Any small amounts of left-overs go into margarine tubs before freezing and get used for jacket potato toppings.

    Oh, my Olliebeak! I'm so pleased that you've said you run three freezers. Up till now, I have kept very quiet about the fact that I have ... wait for it! .. four and three of them are large chest freezers! I always felt slightly ashamed that I was perhaps going overboard with my OS ways and didn't want to risk being called a frugality addict!

    In my defence, we do live in a very rural location and the nearest shop of any kind is a mile and a half away, with no bus service in this hamlet. Keeping good stocks of food seems sensible to us as well as cutting down on petrol costs to go fetch perhaps just a loaf of bread and some milk.

    I also have a son out law who runs a mobile veg/eggs delivery service to many of the outlying villages around here and lucky me gets GIVEN all the tired, slightly bruised or mis-shapen produce. I can't tell you how inventive a cook you become when you are given three hundred lemons or 19 bunches of spring onions but nothing goes to waste here, I can tell you. We reckon that the electricity costs to run four freezers are way under what it would cost to go out and buy all that food. Fortunately, our freezers are in an adjoining garage as I'm not sure we'd have room to move if they all lived indoors.

    The third one was quite 'accidental'. I've had my 'half-size' chest freezer for years and have no intention of parting with it. Also had a half/half (Candy). However DD was getting rid of her half/half which was bigger than mine with a much bigger fridge - as she only wanted £50 for it I decided that was too much of a bargain to miss (plus it goes with my kitchen lol). The intention was to sell my own half/half. However, after a shopping trip of bargains, I decided that the unwanted half/half needed switching back on again to accommodate all my goodies.
