The ethanol will evaporateIt boils at 78C (compared to 100C for water) so simmering your casserole for a couple of hours will shift all the alcohol

Guinness is good with steak casserole in the slow cooker. I add 1x440ml can. To this, I add, carrots, mushrooms, onions, garlic, celery,30g butter. This is plenty of liquid as the vegetables release water as well.
Today I'm cooking a gammon joint in the slow cooker . I add just a cup of water and it cooks in its own juices. I am serving this with carrots, pease pudding and broad beans.0 -
I always use beer when making a beef casserole in the slow cooker and nobody gets drunk!0

But a slow cooker is pretty sealed, won't it just condense on the lid and run back in again? (dense question, I know!)June Grocery Challenge £493.33/£500 July £/£500

Not dense at all :T I reckon that most of the ethanol will boil off when the lid is opened, and really don;t think that anyone will get any effect from a casserole cooked in beer

Newcastle brown will be fine. Sometimes I use stout, other times I use a dark ale. They both work well.0

sorry, forgot to give an update..casserole went well, altho "Ale" taste was a bit too subtle(OH couldnt taste it at all)I think this was because i was over cautious and only used 1/2 the bottle...will make it again and use the full bottle next time.Slimming World..Wk1,..STS,..Wk2,..-2LB,..Wk3,..-3.5lb,..Wk4,..-2.5,..Wk5,..-1/2lb,Wk6,..STS,..Wk7,..-1lb.

Hi Cooking Mama
I have added your thread to the existing one which discusses alcohol cooking off, so do read back for other suggestions.
