Did you ever have lemon curd for pudding at school? It was a thick layer of lemon curd on a pastry base. What was the pastry?

My first thought was shortcrust pastry but wasn't it more biscuity? So now I think it might have been a shortbread type thing?:j0 -
I don't think it was shortbread. Maybe it was shortcrust.
I really fancy some though. That and sponge with pink icing, and chocolate sponge and chocolate sauce!

I think it must have been shorter shortcrust with sugar in it.

It was always a very short sweet shortcrust on ours and had a rather crumbly texture. Now when I make it I just use a regular shortcrust as I find the sweet one is a touch too sweet for our tastes0
