Interest only - No endowment

Scouring this forum the other day, I found a couple of posts that mentioned that it was the best policy for those that had an interest only mortgage to avoid having an endowment as the means to final payment.
What BS / Banks would allow the borrower this facility to plan their own final payment. Why is this idea a good one and what ideas do you have to make payment off capital if this is allowed.
Unfortunately, I cannot find the posts and would value your ideas.
BTW I intended to apply to FD for an Offset mortgage unless your advice suggests say YBS because of the above.
