does anyone know how to make a nice garlic dip

Alioli is good
I use good mayo,crushed garlic with seasalt,dash of lemon juice,black pepper,parsley or dried herbs.
Must mix well and chill.
Great on croistini,veggies,crusty bread.

If you're going to use dried herbs, I'd make it in advance or you get a 'crunch' which isn't nice. A quick, easy, cheats way is use garlic puree - I tend to do 4 mayo to 1 garlic, no need for salt for us but we don't use salt in our food much, herbs if needed but if you're pushed for time no need to. Adding water depends on what you're using it to dip into, can be added to the consistency you need.One day I might be more organised...........

I make proper garlic mayo - with an egg yolk, crushed garlic, salt, touch of mustatd. Then I make mayo with 2/3 sunflower, 1/3 olive oil.
