Warm beef mince in the fridge?

Hi all

Today I made a large stock pot of lentil based curry with the idea of making several curries with different meats / veggies. The lentil stuff is now cold and I have mixed in a bean mix from a tin.

I have cooked some beef mince with a little of the same curry paste and wish to add the lentil base without possibly poisoning myself later in the week biggrin.gif

Should I wait til all is cold before mixing together, or can I do it now and put the result in the fridge, prior to freezing?

Worried about reheating and I know chicken should be cold before fridging (is that a word?) but does the same apply to beef?

It all tastes fantastic and I want to do this again but am all too aware about bacterial growth but do not know how that would apply here.

Any advice gratefully appreciated!

  • Personally, unless you're going to heat through immediately, I'd let everything cool down and then mix it together.

    Just after advice for next time. You echo'd my gut feeling so it's likey the way to go. No point poisoning myself when the idea is old style moneysaving biggrin.gif

    Already the lentil base has matured and improved, whatever I get to eat this week ought to be tasty!

    For next time....I think it would be okay to let the lentil mix warm up again...it's meat that you shouldn't let warm back up...but still better to let it cool first...but more importantly, you dont want to be putting warm things in the fridge because you will raise the temp in the fridge and may cause all the food to go bad.:D
