Cups are an American measure, and they're a standard size - you can't just use any old cupThe sets of cups are really cheap, you can pick them up for a few pounds. They're handy to have if you like baking as so many recipes now use the US measures. If you google for a conversion chart you should be able to find what a cup is in grams, if you don't have any.
And yes, use any fruit you like. If the glace cherries are sticky, then it's best to rinse them first so that they don't make the cake too sweet.0 -
fruit cake, all in one
6oz soft marg
6oz sugar
grated rind one orange
4 eggs beaten
8oz sr flour
12oz mixed dried fruit
2oz cherries quartered
1 tbsp syrup
160oc gas 3 line a 8inch round tin with greaseproof paper or tin foil also if the cake is browning too much before ready lay a piece of foil on top
mix all beat 2-3 mins, put in tin smooth top, bake centre of oven for about 21/2 hrs or till skewer comes out clean, cool in tin
the cake improves with keeping0 -

Do you have a measuring jug? You want something with a volume of 250 mls. If you're lucky one of your cups might do, or have you an empty yogurt pot you could mark the volume on with a marker? You can use any dried fruit, cherries etc as you please. Just try to keep the total measurements to about what the recipe says.You never get a second chance to make a first impression.0 -

Had a bash at the cake this evening.....made it in a real hurry - didn't look very good when I was making it (milk seemed to separate & curdle).
Instructions weren't very bloke-proof - recipe calls for a teaspoonful of mixed spice, but it's not mentioned anywhere in the instructions. Presumably, I just measure it out and leave it on the side somewhere?

Just been reading through and I'm wanting to pick your brains too.
My grans favourite everyday fruit cake was a boiled one(it was so delicious) but I can't remember the recipe.I just know it had a tin of condensed milk (the thick sugary one) which you boiled with the butter and fruit and it smelled heavenly whilst it was baking.
Anyone know a recipe like that.

397g tin condensed milk
5oz margarine
8oz raisins
8oz sultanas
8oz currants
4-6oz cherries chopped
8oz plain flour (its years since i made this cake and i see i have scored out plain and put sr flour for some reason not sure why
2 level tsps mixed spice
1 level tsp cinnamon
1/2 level tsp bic soda if using plain flour
2 eggs
150oc gas 2 grease and line a 7inch round tin
put cond milk, marg, fruit and cherries in a pan low heat till all melted stir well simmer gently 5 mins, remove from heat cool 10 mins, stir occass
sieve dry ings make a well in the centre add milk mix and eggs, quickly mix till well blended
turn into tin, smooth top bake 13/4-2hrs or till well risen, golden and a skewer comes out clean
cool in tin 10 mins
