Ok, I need to make somthing healthy for his tea tomorrow to stop him nagging. He is a veggie and the rest of us are not. I have to fit this between work, delivering dd to rugby and myself to my dance class. So can't take up to much time. Any suggestions please. he doesn't like rice.

Fry an onion, stir in some diced potato, carrot, celery, etc. Add water, season, boil and simmer until cooked. Add a couple of tablespoons of frozen peas and a tablespoon of pesto. Barley at the beginning or small shape pasta at the end bulks it out but the soup with plenty of home made garlic bread is enough for my lot.0

sorry i dont know how old your son is - if he is too young for my suggestion please forgive me.
i grew up a veggie in a meat eating family (due to allergy) my mum tried her best but my food improved once i started doing home economics in senior school. my mum encouraged me to experment with a vegetarian cook book and helped me with getting ingredients for dishes i thought i might like. my family started having a veggie meal i had cooked once a week (some of those dishes have become firm family favorite meat free meals). why not encourage him to cook meals himself occasionally - start with simple stuff like ratatouie (sp) and macaroni cheese and sit down as a family to try somthing new (keep beans and bread in the house as occasionally i had a disaster that was changed for beans on toast quickly) he will have to learn to cook at some stage in his life and you would be doing him a favour in encouraging him to start young.Dogs return to eat their vomit, just as fools repeat their foolishness. Hi there,
We are all veggie in this house, but when I want a quick meal which also impresses visitors I do Fresh Pesto and spaghetti;
cook 100 - 125gms spaghetti for hungry man. (10 mins), meanwhile in a blender:
100gm bag pine nuts,
one garlic clove peeled
all of a growing pot of basil (not the dirt bit!)
grated parmesan prob 50gms ( may be a third ish of a pre packed wedge thing)
olive oil, enough to make a paste when everything wizzed up in blender together, stir through spaghetti and serve with salad, and grated parmesan and any left over pine nuts (whoops should have said that at the beginning!)
Total time to prepare AND cook = 10 mins!
- all amounts are estimates, i usually use handfuls and taste as I go along, and have enough to put in a screw top jar will keep for a few weeks if you let it!. Can use it up in soups, sandwiches, pasta, mash etc and you won't believe the difference in taste using home made stuff.
You can vary it using different hard cheese, rocket instead or as well as basil, different oils etc, but I really like the original one. I usually use two pots of basil to make mine.Jan 2012: CC £2,340.30, 2nd mortgage £22,932, Mortgage £57,5380
