    Hi bexstars,

I make this recipe posted by Becles, it's so easy to make and is delicious.

There are more recipes on this older thread too which may help:

    Hi,

Im making Spagetti Carbonara for dinner tonight, but, I only have double cream or cream cheese!!!! Would I be able to make it with either of those. The recipes I have say to use it with single cream, and I dont want to go to the shops unless I really really need to.

  • I make mine with double cream all the time! Never tried it with cream cheese.

Will play it safe then and use the double cream.

    Thank you.

  • When I make spaghetti carbonara I don't use any cream, just bacon eggs and cheese, I don't like creamy sauces really. I love Rick Steins recipe.

am sure you could use the double cream if you had to-but go on-try it without it is SO tasty :D
  • That Stein one is good. I seem to remember him saying that Italians don't like to put cream in when it was featured in the series.

I usually make mine with mascarpone, but I'll try that recipe, thank you.

Yeah the creamy ones are more americanised I think.I have always just made it with eggs and cheese (I think it used to be a Delia's cookery collection one before I tried the Rick Stein one-I think the parsley makes a big difference, and I use grana pandano, parmesan or pecorino-unfortunately haven't managed to get the sardinian one) I rarely have it out as I find they always make it too creamy (its my one step towards healthy eating I suppose:rolleyes:)

I googled a recipe for this last week as kids had enjoyed it when we had a meal out, anyway i were sent to a hugh fearnley whittingstall recipe on channel4.com this is using double cream. I found however that the volume of cheese needed was too much and over powered the recipe so will cut back on it next time.
