HM fruit juice gone fizzy?

I made some elderberry juice last week (just elderberries, water, sugar and lemon juice) and bottled it... I have just poured some and it fizzed up a bit in the glass... what's that about then?

I drank it anyway and it still tasted alright, but does it mean it's going off?

Make your own Pot Noodles using a flower pot, sawdust and some old shoe laces. Pour in boiling water, stir then allow to stand for two minutes before taking one mouthful, and throwing away. Just like the real thing!

    There's something got into it and it's started fermenting ;) This is the first stage for turning the sugar into it into alcohol, but unless it's the right bug, it may not make something drinkable :D Did you sterilise all your equipment and the bottles :confused:

    I have a cast iron constitution, and might well drink it myself, but wouldn't offer it to anyone else.

    Next time you might want to freeze it in small quantities and defrost as needed.

    The only things I didn't sterlise was the plastic funnel and the bottle tops. I just opened another bottle of it and that hissed at me too!

    I think me and elderberries just aren't meant to be... I made some vodka thing with them a couple of weeks ago and it tastes like poison lol.

    The vodka will taste horrible for a while. I've found through experience that fruit vodkas need to be left for at least four months for the taste of the fruit to mature.

    OK, thanks... though I think in this case it's because I overdid the cloves (it was meant to be a spiced version), but I'll try it again in a few months and see if there is any improvement.

    I you're making anything to be preserved you need to be scrupulous about cleaning everything. You can make yourself very ill if you introduce certain nasty bugs into something and then eat it after they've had a while to grow.
