sloppy pizza dough

I put in all the right ingredients in the right quantities, i have done this LOADS of times and never had a problem.
Now sitting in my bread machine is a PUDDLE of slop :(
if i put more flour in it will it be salvageable?
Will i have to wait and see if it rises again?
Or should I just try and cook this slop as a loaf and see what happens?
Dunno what to give the kids for tea now my plan has gone out of the window!

  • Oh dear, did you add more flour or did you have to conjure up something else for your children?

I ended up running the dough through on a quick bread cycle and got a fairly pale soft but neverteless edible loaf, and I phoned the takeaway  haven't done that in ages! And for once I'm not going to beat myself up about it either!

This happened to me a little while ago, I just added more flour and it was OK. The only explanation I could come up with is that I didn't add enough cups of flour (three instead of four I think). Fortunate it was for pizza dough and not a loaf - for both of us!

I have just tried to make some pizza dough in my Panasonic BM using the recipe from the instruction book that came with it. I have made it quite a while ago and it was fine but can't remember what recipe I used.

Basically I have just put the yeast, flour and water in the pan and set it to pizza dough which is 45 mins. Have just looked and it is a yukky mess. Anyone have any ideas what I might have done wrong please? Will have another go as I have the topping all ready but don't want to make the same mistake again.
  • My tried and tested recipe, made hundreds of times in my Pany on the 45 min pizza dough setting, which has never let me down, is:

Slightly less than 1 Tbs dried yeast
    1.1 lbs of plain flour
    1 tsp sea salt flakes
1 tsp sugar (or slightly less)
    1 Tbs oil
    300ml warm water

This makes enough for 4 thin based pizzas. Also freezes well in balls for future use.

Thanks for your recipe. I was unsure about the quantity and directions from the Panny manual as it talks about the stage 1 culture-pizza dough and stage 2 basic dough. The quantities under the pizza dough were half teaspoon yeast, 6oz flour and 200ml water.

Probably a bit late now, but you don't mention salt or sugar?

The basic Panasonic pizza dough, done on the dough programme which takes 45 minutes is: in the following order -

    Half tspn yeast
    300g flour
    Half tablespoon sugar
    Tablespoon oil
    Tablespoon milk powder
    Teaspoon salt
    200ml water

Always works although it is a bit soft and sticky to handle, but that is typical of most breadmaker doughs

Just noticed you said quantities were 6oz flour and 200ml water - should be much more flour, more like 11 or 12 oz, hence your sticky mess

Thanks for your help. Had something different tonight but will try this tomorrow. The above quantities were taken from the booklet that came with the BM and I noticed that no salt or sugar were included.
  • I don't think salt and sugar are a problem, it's not rising like bread so it should be OK. As said above sounds like not enough flour to water, did you try adding more flour to the sticky mess?
