office cakes- no time to shop

My turn to make cakes for tomorrow. Can't shop before then.
They asked for apple cakes :rolleyes:
I have:
the usual flour, eggs, butter, sugar.
ready made meringues
3 small eating apples
dried fruit
... and very little free time
I thought welsh cakes and
any brainwaves for something really easy with the ingredients?

Hi aurora,
There are some fairly simple apple cake recipes on this thread: apple cake I made apple and blackberry muffins last week and they were lovely....basic muffin recipe, stewed apples and frozen blackberries added to the mix.
These are very simple to make (take about 10 mins) and you might need to pick up some ingredients but they always go down really well.
Fifteens
15 digestive biscuits (crushed)
15 glace cherries (chopped)
15 marshmallows (chopped)
small tin of condensed milk
dessicated coconut
Mix the biscuits, cherries and marshmallow in a bowl with the condensed milk. Squidge the mixture together with your hands and roll into a long sausage shape on greaseproof paper sprinkled with the coconut. Wrap in the greaseproof paper and chill in the fridge for a couple of hours and then slice.

Dont know how many you are cooking for but this is my recipe for
APPLE CAKE
6 oz s.r.flour
6 oz caster sugar
6 oz marg
1 tsp cinnamon
1 tsp baking powder
3 eggs
Mix everything together well, add 2 CHOPPED APPLES, mix in. Pour in 8" sq tin (lined). If you feel like it core and finely slice 1 APPLE and arrange nicely on the top. Hope they liked it. My lot eat it very quickly. How was the meringue thing sounds interesting. They loved it - isn't it light!
The meringue thing was v nice too but very sweet
