As a keen sea angler I like to catch the fish I like to eat.
The good ol mackerel is always tasty in the summer - cheap and plentiful, the fresher the better. They are so oily that grilling and barbecueing is a great way to cook them.
My all time fave - sea bass. The king of fish. I will bake them whole wrapped in foil with herbs. If I am lucky enough to catch bigger ones then I may fillet them, still bake. I descale them. When baked, the flesh falls away from the skin and bones so easily.
Next up - bream. Quite a chunky flesh on this small fish (although I would *never* eat them as small as the french like to, that is not eco-minded). Again bake them in foil with your fave herbs - or no herbs, as all these fish have a great flavour that need not be hidden behind garlic etc.
This time of year though is the time for whiting. Very similar in taste to cod (pretty much the same actually). Love em!*************************

Pollack is a lovely meaty fish, if you can buy fresh fillets it is best to freeze it first then defrost it and bake it for not very long 15-20 mins, I eat it on top of ratatouille mmm lovely, also excellent in a fish pie, if you have the tail end there are less bones although the bones are big so easy to spot.0
