Uses for fatty beef?

I bought a joint of beef from Tesco, not realising it was a 'rolled' comprising about 40% decent quality meat and 60% stringy fatty beef that's chewy.

Is there any use for the stringy bit of beef that could turn it into something more palatable? I hate throwing anything away, but it's truly not very pleasant to eat - it has a weird texture and the minutes tick by as you try and grind the stuff down in your mouth.

I thought curry, but that won't change the stringy thing. Could I mince the stuff? Or does anyone have any experience of doing that and it hasn't worked out?

  • yes you could mince it, or whizz it in a blender. i`d probably use it in a stew or casserole, cooking it for an hour or 2 could tender it up a bit, and if the bits are small enough you wont really notice the need to chew.

    As I've been caught out with tough old beef before, I usually cook my beef joints low and slow, so it had already had around 5 hours and a final high blast to crisp it up. That's why I was so disappointed that even that length of cooking time hadn't had any effect.

    Good idea about the cottage pie and a casserole. There really is so much of it I'll be able to do another two meals at least and I'll try these two. Although I will have to chuck away the lumps that hubby eventually spat out on the side of his plate.

    Although the cruel money saver in me is very tempted to 'recycle' them....

    If I have rolled beef (brisket), then I put it in a pan of water on the stove, with some sliced onions and carrots, salt and pepper and let it stew on a low heat for an hour or more (remember to keep looking in pan to see if needs topping up with water).

    You end up with something that is nice, not tough or stringy, cheap with lovely rich gravy (add gravy granules or gravy browning to juices to make a nice gravy). Serve with roast or boiled spuds, stewed onions and carrots, and greens...yum:D

    i have also been having a freezer clearout and have a joint of beef - (bought on a yellow stickie 99p from 5.99 ) forgot it was in there as you do LOL

    dont wanna use it for a roast -- would prefer to use it for mince to make a couple of cottage pies !

    Should i cook it then mince it or just straight mince it and use it ?

    Hi we buy these cuts of meat a lot because thay are cheaper than other cuts. And we enjoy the fatty chewy bits lol....
    Stew is always good with these cuts. Or these is curry....
    Or how about useing it to make spag bog?

    If you have a cat you can cut a pice off and give it to them.
    Its fun to whach them trying to chew it!!!lol!!!!!
    And it keeps the cat busy for awhile.... Our cats love haveing a good chew on a thouth pice of meat!!!

  • We also buy these because they are cheap! We usually oven cook them for a few hours and they are fine but the last one was pretty tough so it got minced and used for cottage pie. This week we cooked one in the slow cooker with a very small amount of water and some veg and it is beautiful....
