Have just gotten back from holiday in Spain where we again came across the "flan" (present at pretty much every dessert where we were). I also spent some time in South America, where a friend taught me his mum's recipe - and as I hadn't made it for ages (and inspired by holiday), have just made one.
Very OS I think - simple, cheap, nice when warm, equally nice next days cold out of the fridge:
Whizz in the blender: tin of condensed milk (400g ish), same amount normal milk, 3 eggs
pour this into a buttered dish, which is in a bigger dish with water (am very clumsy:o , so find best way is to put smaller dish in the bigger first, then pour in mixture, then put dishes in the oven, then add the hot water to surround the smaller dish)
Put whole thing into oven, quite low (170ish) for about 40 mins. Until mix is solid and top is dark brown (mmmmmmm! the best bit!)
Does anyone else make this and have any variations? Or any toppings/things to go with???

Mmmmm is that like the catalan flan that we got in barcelona? A bit like creme caramel. Anything with condensed milk in is okay by me!Just call me Nodwah the thread killer0

Ooooh FLAN!
Yummy. I'm Argentinian, so yes, this was one of the most popular puddings as I was growing up.
Delicious with Dulce de Leche on top (Argentinian-style toffee sauce - you can buy it at Tesco's)
Ohhhh I have a craving now! But I'm sure my mum's recipe is different to Alex's - I'll ask and report back.

Sounds like a good cheap desert to me and a way of using up milk, I take it that this is the one with the slightly toffee/burnt sugar liquid

......even condensed milk by itself.. (:o yes, I did scrape the tin out with a spoon and eat the last little bits - this is moneysaving after all!
)
Is there a way to make the dulce de leche sauce?? Or any of the other caramel-y sauces that seem to go with this? In Spain it seemed to be quite a thin/watery sauce..
The pudding itself just seems to go brown on the top (there's nothing extra I put on there). But I guess that there's masses of sugar in the condensed milk that must help!
Also in the recipe (to avoid confusion): After I've emptied the condensed milk into the blender, I just use the empty tin to measure the same volume of milk. (Maybe 400g=400ml in this case???????)
Also, the recipe makes about 4 portions, so I often double it if there's more people.0
