I love the cooking also toniq...I have never gone anywhere for crimbo dinner..Up till 2 years ago I was cooking for 14 christmas day and boxing day and then again new years day....Then mom passed away 2 years ago so its just me, john and the 5 kids. Although Reece ( my eldest ) moved out to university he still comes and stays at christmas so thankfully have all the kids there. My brother and his wife and son come for dinner each year but not sure whether to have a rest this year. I miss not having mom here though.. I was crying last week because she never saw Reece graduate and he was her very special grandson..:sad:Best Competition Wins-Brand New Vauxhall Corsa & £30000

750g/1½ lb potatoes, peeled and quartered
500g/1lb skinned smoked haddock
50g/2oz butter, melted
1 x 85g/3oz pack watercress, finely chopped
2 eggs, beaten
200g/8oz natural dry breadcrumbs
3 tbsp oil
Boil the potatoes in salted water until soft, drain well and mash. Leave to cool. Steam the smoked haddock for 8-10 minutes. Cool and flake, removing all the bones. Stir the smoked haddock flakes into the mashed potatoes. Add the melted butter and watercress and form into eight cakes on a well-floured board. Chill for 15 minutes.
Dip each cake into the beaten eggs, then the breadcrumbs and fry gently in hot oil for 3 minutes each side. Serve with a crisp mixed leaf and watercress salad.
Ok! So I poach the fish and use the milk in the mash and I never weigh anything but they work for me.
