Penny Pinchers fab Shepherds Pie recipe. Even I can make it.
Look out for Curry Queens curry, and Caterinas bolonaise recipes as well.

Perhaps you could print out some recipes and stick them into a scrapbook? Decorate the front with pictures and cover with clear sticky backed plastic. That would keep it nice and easy to clean.

i was gonna suggest how about a simple spag bol sauce etc then he can freeze it down, but i have just remebered reading u said he didn't have a freezer.
so another idea might be if a couple of other family members could save up and get a cheap second hand freezer from the local paper. on the island it is very easy to pick a freezer up for about £10- £20 .
but can't really think of any other recipes , u seem to have quite alot of great ideas already.0
