I'm trying to cut down on the amount of red meat I'm eating but I'm finding it hard to think of anything else. I dont have that many meals that I do that are veggie or based on fish or poultry so I'll be looking to steal lots of ideas for this from you all :p

Steal away - I've already added "orange soup" to my list :p:p:D (we have soup most weekends during the cooler months).

Have you tried Gingham's Veggie Meal Planners  (there are 3 of them - shout if you can't find them on a search - title search for "Gingham" will be best ;) ). We decided to cut down on meat last year, and have at least 2 meat-free meals a week. Thanks to those threads it's often more than that :D

I also took loads of vegie cook books from the library (think there's a thread on that somewhere). One was so good, I bought a SH copy from Amazon!

I have read those threads but I think I'll go and refresh my memory, thanks :)

I do a "red soup" too that you might want to steal ;) - chopped tomatoes, red pepper and red onion. Yummy

Usually do plans, but sometimes come unstuck - maybe I'll stick to them if I post on here, plus find some more ideas as we get in a rut sometimes!

Fri - Fishcakes from Jamie Oliver £5 card from Mr S
Sat - Pasta (oddments in freezer) & 1/2 price sauce from Mr S
Sun - DD for tea, so just basic lunch (salad or bacon sandwiches)
Mon - Quorn/veggie burgers, rice & mixed veg
Tues - Braised steak, veggies, roast pot & Yorks
Weds - H/m soup (& h/m made bread if time, or oddments of bread from freezer)
Thurs - Veg curry (casserole veg in freezer + tatties)

DH comes home for lunch - he just has toast/sarnie - DS2 at college, dinner money for 2 days, snap other times, DS3/me leftovers, beans on toast, etc. All have yoghourts/fruit after lunch, similar after tea but make puds 3 or 4 times a week - crumble, fruit salad, etc.

  • Hi everyone. It sounds like everyone has some tasty meals planned for this week - all very inspiring and making me feel hungry!
TKM - What's harira? Sounds interesting and possibly Morrocan?
angelnikki - We've cut down loads on red meat over the past year and eat veggie meals regularly. Having said that, my meal plean this week is quite meaty! I'm trying to use up leftovers and stuff lurking in the freezer. It badly needs defrosting! I used to be veggie many moons ago, so thankfully I still have a good collection of veggie cookery books. Look out for books by Sarah Brown, Rose Elliot or Cranks (the veggie restaurant) in charity shop and feel free to pinch ideas!

Anyway, here's my first meal plan.:D This week we mostly be eating:

Friday - Sausage Jambalaya (leftover sausage)
Saturday - HM Meatballs & pasta & HM Garlic Bread
Sunday - Roast beef (frozen in gravy), roasties, roast parsnips, yorkies & veg
Monday - Lentil burgers, HM rolls and potato wedges
Tuesday - HM Cottage Pie (freezer)
Wednesday - Hake coated in breadcrumbs (HM) & HM oven chips
Thursday - Welsh Rarebit (I work until 8pm on Thurdays, so we always have a light supper when I get in)

    Breakfasts
Yoghurt (some HM, some bought), muesli, toast, brioche / croissants (weekend treat)

    Lunches
Sarnies with various fillings (cheese, egg mayo, lentil pate), pasta salad, jacket spuds & tuna

    Snacks & Treats
Fruit, yoghurt, HM iced fingers, rhubarb crumble & custard

    Think that's about it!
