urgent apple strudel help

I've decide to make apple strudel for pudding this evening - I have the outlaws for dinner.

My puff pastry is defrosted, apples, cinnamon, and raisins ready to go. Except that I have realised that I haven't got a recipe.:rolleyes:

Having googled it seems that I can just dice the apples mix with cinamon and raisins then roll this into the puff pastry and egg wash before baking. Does this make sense? anyone anything to add tips wise????

  • That's what I'd do, but I'd add a bit of brown sugar to the apple/cinnamon/raisin mix so that you get a bit of a caramelly flavour from where the juice of the apples mixes with the sugar. But it depends on what kind of apples you're using - if they're dessert apples then they might be sweet enough, it's up to you :)
  • Yes, that is O.K. But add sugar to taste.
    If you like you can put some bread crumbs onto the pastry before adding the apples etc as this absorbs some of the juice, (if you are using baking apples.) Also good to add ground almonds, as well/instead of the breadcrumbs. (Bread crumbs are bread whizzed in the blender, not the yellow ones you put on ham!!!)

    don't have bread suitable to crumb, so will try the ground almonds as have some in the cupboard. thanks guys. I knew you would know :D
