    Hope this is in the correct forum, sorry if not.

    After recent success with homemade vegetarian pasties I'm going to have a go at making samosas. I have found a recipe on the quorn website - http://www.quorn.co.uk/recipes/Quorn_Samosas.aspx which calls for tikka masala curry paste. However I am trying to cut down on buying things for just 1 particular recipe wherever possible - I do have some Thai green curry paste - would this taste right in samsosas or is there a specific variety of spices that I would be better off using to get the right flavour (along with a bit of tomato puree to bind it). Or do I really need to buy the tikka masala paste?

    Hi,

    I don't think Thai Green Curry paste will have quite the same effect. Curry paste is nothing but a combination of dry spices, oil and herbs, so try mixing equal quantities of cumin powder, coriander powder, turmeric/ curry powder, with some tomato puree and a little oil, and it should do the trick! I am not sure about your quantities, so I can't be more specific, sorry!

    I concur with Liverpudian _ Thai paste will be heavily coconut flavour and wouldn't work, When I have helped make them the ingredients have been cooked with spices - ie chicken with a little coriander, cumin, garlic and chilli - either fresh or paste/flakes - then put into the pastry to fold.

    Thanks both of you for your replies. I had a feeling that the thai paste wouldn't do the job. At one time I would have just gone out and bought what ever each recipe called for, whereas now I am starting to realise that many things can actually be made up from what I already have, and much cheaper too. I will give it a try with the spices and see how it goes.

    I would highly recommend making your own curry pastes if you have the time, inclination and resources !

  • I made a delicious cauliflower and potato curry the other day...cheated tho and used pataks mild curry paste,ive still got 1 jar of madras paste in the cupboard(1/2 price in morrisons)...Not too bad value at 1/2 price,but work out expensive when full price,im wondering if anyone makes their own?..I mean the actual paste,rather than a sauce(iykwim);if so apart from ingredients what equipment do you use?pestle n mortar,stick blender,food processor?.Thankyou.

    B&M do Pataks pastes in a can for .49p. I used to always make my own Korma, but bought a can from B&M to speed things up one day and the family love it just as much as my own and I reckon it's cheaper than buying the ingrediants I used for my own recipe.
  • to make any sort of spice paste, you need to mix the spices with oil basically. Just spoon the dry spices into a bowl, add some oil and then blend the mixture together. The spices you use will depend on what flavour you want obviously, but once made up like this can be used the exact same way a jar of paste is used.

    Hi cooking_mama,

    I like Patak's curry pastes and use them sometimes for convenience, but make my own most of the time and just use a pestle and mortar as I prefer to make small amounts of paste at a time, rather than make a large batch of one flavour. I had a quick look on google and you can find lots of recipes for madras curry pastes here

    I'll add this thread to the main one on curry pastes later to keep the replies together.
