Help! What to do with fresh Mussels?

Ok, this is the sort of thing I was thinking of. Can I use single cream instead of creme fraiche? I've got no thyme. Any alternative suggestions? I assume I can safely replace the shallots with the red onion?If you lend someone a tenner and never see them again, it was probably worth it.0

That recipe looks fine. Try parsley or chives, instead of the thyme.
Cut the onion very finely and don't use TOO much.Felines are my favourite
