Dried yeast - gone out of fashion?

I normally use fresh yeast when I have it, but I have always kept a tin of Allinson's dried yeast to hand in case I've run out of fresh stuff.

But this week I used the last of it, so went looking for more.

Tesco, Budgen, Co-op, none of them now have it. Tesco & Budgen, at least, always did do but now there's not even a space on their shelves where it was.

Sure, they all have 'fast bake' yeast, for breadmakers, but no ordinary dried yeast for hand baking.

Has it become extinct?

  • Hi Biggles, last time I was in Lakeland I got a packet of their dried yeast and it seemed good value, not in small packets but in a bag. I haven't used it yet as I'm using up old stock but I think it is doves farm so it should be ok...I don't think I paid more than £1 for it...

Allinson dried yeast is still available at my nearest tescos (125g 84p)

I use Doves Farm Quick Yeast (99p for 125g) you dont have to reactivate it in water but you can use for BMs or for hand baking ;)

Tonight I had the opposite excitement ... I normally use Dove's quick yeast (orange rectangle) .. but tonight in Morrisons ... they were selling fresh yeast for 39p ... I've bought some, but never used fresh yeast, so it's going to be a whole new adventure for me and my loaf making at the w/e :j

OK, thanks for that, must be a local anomoly, I'll keep looking. Luckily I've got a local baker I can normally get fresh yeast from (even though he's suddenly put it up from 7p an oz to 10p).

    I buy mine from Tesco
  • Hi - I sometimes use fresh yeast for my by-hand baking but more generally dried for convenience. I don't really like the Allinson one which has to be pre-disolved in water and prefer the Doves Farm one which can be added straight into the flour. It comes in a packet which costs 99p for 125g from Waitrose or Lakeland (and possibly other places). I find this more convenient than the sachets because you don't always want to use a whole sachet and it works out cheaper too. Also, even though it is described as quick yeast, it doesn't contain any "improvers" like you find in the sachets. For example, the McDougalls Fast Bake Sachets cost 96p for 56g and contain Dried Yeast (93%), Calcium Sulphate, Flour Treatment Agents: Ascorbic Acid, Alpha Amylase; Emulsifier: Sorbitan Monostearate. The Doves farm just contains Yeast, rehydrating agent (sorbitan monostearate E491). I don't like E numbers but I assume that as Doves Farm is an organic brand they wouldn't put anything too nasty into their goods. I find that one teaspoon happily raises 1kg of flour without too fast a rise which I found the sachets often give when I have tried them.
