Any ideas for chicken dinner tonight??

Hi All,

I had some pieces of chicken in freezer-so took them out to defrost last night (drumsticks, thighs). I want to make something for dinner for me and OH and am going through the posts now for ideas.
Dont really have any exciting ingredients-peppers,tomatoes,potatoes,leeks,stock etc (sorry cant rem as im in work at moment and need to look through cupboards!:rolleyes:
OH will be home after me-and always wants to just get take-away or pop round to marks and spencers-but I'd really prefer to use the chicken and not spend!

Any ideas lovely people?:D

    Well if I were you I would fry all veg in a pan that can be put in the oven (this will ensure that you get all the nice taste from the veggies that you fry), then when they are softish put in your skinned chicken and fry that too. If your pan isn't big enough take out the veg while you fry the chicken. When the chicken has a bit of colour on it put your veg back in and add some chicen stock and then put in the oven. If you,ve got wine then add a bit mmmm. Leave in oven for over an hour to make the chicken lovely and 'fall off the boneish'. Thats what I would do! Hope you find a good idea. You may want to thicken the sauce with a bit of cornflour at the end.

    I'd do similar, but using the tomatoes to make a tomato-based sauce which would go lovely with peppers, then I'd make saute potatoes to go with it, and probably cook the leeks in butter as a side dish.

    How about some chicken and bacon vol-au-vents (that's what we had today!). Basic white sauce, add some sauteed onions, garlic, chopped peppers, then add some chicken (we had leftover boiling bacon also, you could use some rashers if you wanted), pour sauce over puff pastry vol-au-vent cases, and serve with spuds and veg. Quick, cheap and very yummy!

    Thanks for your replies yesterday!

    I didnt get home til near 9ish-and decided to take inspiration from 1ubthrifty-and made the following:

    Skinned my chicken pieces-fried them off, then fried off my peppers, red onion, clove of garlic, leeks, and added a little soy sauce before bunging it all in casserole dish and covering in cream of tomato soup-left it in over for an hour and had it with baby potatoes!
    Got the thumbs up from OH-(who, before he had tried it, asked what else there was to wat, "just in case".) Was really pleased with the end result!:j
