Bacon in quiche and third meal?

Hi
I have a bacon joint and wondered if it is ok to use this in a quiche lorraine instead of the rashers? i have never made a quiche before so not really sure how it will turn out.
Also I am aiming to make 3 meals out of the joint...1- quiche (if it can be used in that), 2 - bacon beans cheesey pie, so just stuck for a third.

ok, not very inspiring but I use leftover bacon joint in cheese and bacon omelette. Or what about a pasta dish?0

Bacon joint / ham should be fine in your quiche, just watch the saltiness.
I like to use left over ham in a pasta dish:
Fry up some onions
When cooked add your ham to heat through
Off the heat add some Creme Fraiche
Stir in some cooked pasta
Season with lots of black pepper
Serve with garlic bread

Oooh yeah I like the idea of a pasta dish. the kids refuse point blank to eat eggs and show how much they hate them by gagging if I ever try to get them to have a bit. I will try them with the quiche but doubt I will get anywhere so they will probably have something different for dinner that night. I have never made quiche yet my mum used to make it all the time and I loved it.
Just worried that the creme fraiche might be quite fattening, I will look out for some low fat, or maybe some natural yoghurt will do the same thing.

Don't know if this helps but we quite often have boiled bacon in our house and I manage to get quite a few meals out of it, provided that it's not all snaffled on the first day its cooked......:D
We normally have some with egg and chips, next day will use some offcuts to make a bacon, broccoli and cheese pie, then bacon and mushroom omlette, bacon and tomato pasta, bacon cheese & onion pasties, pizza topping, bacon croquettes, oh and don't forget to save the water it's boiled in, as it makes quite a good stock (but check the saltiness as it is usually VERY salty)....
Ooh makes me quite hungry to think about it - now off to the kitchen to make a bacon sarnie! :rotfl:SMILE....they will wonder what you are up to...........;)0 -
As kids we used to have it just with buttery mash, peas and parsley sauce. It was yummy!

Wow you get a lot of meals out of it!! I was aiming for 3, but I have made a bacon joint do 4 meals, although I think that was it's limit...
I will definately do a pasta dish - just need to find a creamy sauce recipe, or cheat and buy a swhartz one!
