Desperately need recipe help

Hi have read through the recipe index and got quite a few ideas but was wondering if anyone could help me. Need some recipe ideas for 1 person(no freezer for bulk cooking) and I'm afraid my list of foods I can't eat are quite extensive due to medical problems.
Dont have a slow cooker but have oven, micro, george etc.
They need to be quite easy as my cooking skills aren't very good yet.
They need to be pretty low fat as I am on Weightwatchers.
And obviously they need to be cheap.
Food I can't eat due to IBS:
Spicy food
Bread
Dairy(can have it in small quantities eg splash of milk in sauce and yoghurt/creme fraiche seems ok)
Meat(I am a veggie)
Fried foods
Obviously being a veggie and not eating dairy I am quite concerned by the lack of protein I bought a bag of red lentils but a bit lost as to what to do with them except lentil soup. And I am so so bored of baked potato and beans. I like most fruit and veg except Courgettes and I love kidney beans etc but don't like vegetarian meat alternatives(I don't eat meat because I hate the texture and taste).
Any ideas? I'll love you forever xx

You can add the lentils to pretty much any sauces you make - like a tomato sauce with veggies in to go over pasta.
You'll find the lentils pretty much disappear when cooked and become part of the sauce. They're really lovely in most things like that and dead nutritious and cheap. You could then also add the kidney beans and / or chickpeas to the same base sauce.
I know it's no use to you, but it might be something that appeals to someone else - I also add a tin of green lentils to my hm beefburger mix, and blitz the mince, lentils, spices, and an egg in the processor until it forms a ball. Tastes fab and stretches the meat so much further.I'd rather be a could-be if I cannot be an are; because a could-be is a maybe who is reaching for a star.
