How often can you re-use vinegar?

My mum always used to keep a dish of sliced onion, and sometimes sliced cucumber too, which had been sprinkled with a little salt and sugar and then dressed with vinegar. I have started making this again, don`t know why I stopped really, but I keep mine in a tupperware type tub.
Does anyone know if it is ok to keep re-using the vinegar (topping it up I suppose) and does it need to be kept in the fridge? So much stuff seems to need to be kept in the fridge now.

HI, MY MUM MADE THIS TOO,AND ITS LOVELY. re reusing the vinegar. it is a preservative so its ok to reuse, but as bits will get in it i wouldnt use it indefinately. personally i would make up a small amount of the onion and cucumber mix [ the veg goes soft very quickly so I make it up as needed]. if theres any vinegar left after the onion etc has been eaten , and there usually is, I would put it in a glass jar and leave it in the fridge ready to reuse next time. I dont know the time length but i guess a couple of weeks or so should be fine. I wouldnt top it up, but use a fresh lot of vinegar when the left over has run out."The purpose of Life is to spread and create Happiness" :j0
