cooked spuds?

I am making a roast dinner tonight (chicken) and about to peel the spuds. My question is when I par-boil them, can I do extra and keep the boiled spuds in fridge for saute potatoes tomorrow? or will they go brown and horrid. Otherwise will just cook loads of roasties but then OH will scoff the lot and we won't have any leftovers for tomorrow :rotfl:

Might be too late but yes I always cook extra potatoes and then use for either saute or bubble and squeak (with left over veg) the next day - my fav!2019, move forward with positivity! I am the opposite of Eyeore :rotfl:0 -
Thanks, I always cook extra but was wondering if I can keep them without being fully cooked, so is good to know will only have to peel one lot of spuds (and wash one spud pan
