I have been roped in to make a huge pot of chilli in the slow cooker for my friend's party tomorrow night. She wanted to make it with the chopped chillies that come in jars rather than powder, apparently her sister in law used to use them and it was much nicer. She seems to think you just tip the whole jar in but I think that must be wrong and there are no instructions on the jar. How much should I be using for a 1lb beef batch for a medium heat chilli? I bought the red ones.

Aaaarghhh no no no not the whole pot. Definitely not. I love chillies and use lots (usually fresh) but even I couldn't eat a chilli made with 1 lb of mince and a whole jar of chillies. Try using a teaspoon full and then (chef's perks) taste for 'heat'. My motto with regards chilli and salt is that you can always add some but it's hard to take some away.
