What to do with wholemeal bread flour?

I wen a bit crazy a while ago and have ended up with a massive tub of wholemeal bread flour and i'm not sure what to do with it as the loaves i made with it weren't very succesful.

Any ideas with what i can do with it or possibly a good recipe for w/m bread??

  • You could try this recipe for bread rolls. (I, amongst many others :o ) had given up on bread rolls, but this recipe is exellent :j

    thriftlady uses 1/4 wholemeal flour. I'd advise that proportion first, but I've gone up to 1/2 wholemeal, too :D

    Hi,
    I find that if I use only wholemeal bread flour for loaves they are pretty heavy and don't rise a lot. Instead, I use 50/50 white and wholemeal. Also, if you are using a breadmaker, try adding a small crushed vitamin c tablet (I use the cheapest from Boots). Apparently it helps the bread to rise.

    I like the dense, wholemeal loaf and so use all wholemeal flour. Try mixing it with value plain flour starting half and half.

    Pitta breads are easy. Make the thin shapes with the ordinary dough, leave them to rise and then cook them in a hot oven for 15/20 mins.

    This is my recipe - works for both wholemeal, mixed or all white.

    1lb flour
    1 heaped teaspoon instant, mix with flour yeast.
    1 teaspoon sugar
    half teaspoon salt
    11 fluid ounces warm water
    1 tablespoon oil

    Mix them all together, knead (I use my Kenwood) let it rise nicely and cook.

    I use wholemeal flour to make pastry. Mix it with value white plain and make scones, soda bread.

    Can't think of any uses bar bread, but can give you my recipe which always works for me.

    300ml warm water
    1 rounded tablespoon of butter
    500g bread flour (I tend to use a mixture of wholemeal and white - about half and half)
    A 6g or 7g sachet of easy action yeast (brands differ - have used both weights and both turned out fine)
    1 tablespoon of sugar
    1 scant teaspoon of salt
    • I put everything in the breadmaker and switch on a quick dough (it's about 10 min) or you can knead by hand.
    • Put in an oiled bowl, cover with a damp tea towel, and leave for about an hour and a half.
    • Shape onto a floured baking sheet or into a greased and floured 2lb loaf tin. Re-cover and leave to stand about 45 mins.
    • Bake in a preheated oven at Gas Mark 5/190C for 40 minutes.

    thanks for all the recipes etc think i will be busy making loaves for the next few days lol. I might do it differently to before though make the dough in the bm then cook in the oven.
