Kidney Recipes

Hi All,

Does anyone have some recipes for pigs kidneys? They are very cheap and would like to take advantage of these a bit more.

  • I love kidneys in stews or with a fry up but haven't really found a recipe with kidney as the main ingredient which we've enjoyed. I've tried devilled kidney an curried kidney but neither was so delicious I'd want to cook it again.

    Have you tried the bbc recipe site? That might bring something up.
  • My Dad used to make a kidney dish - I am not sure of the exact amounts but he used to fry off a chopped onion and then add in kidneys which he had cut up and tossed in seasoned flour and chopped up sausages. He used to cook them until they were really nice and golden brown and then add some stock and a tbs or so of paxo stuffing, and cook for about 10 minutes. He would then thicken the gravy if it needed it with a bit of bisto powder dissolved in water. I remember that it was always very tasty.

    I was thinking the other day that you never see pork chops with the kidney still in them anymore. These used to be my very favourite thing when I was a child!

    My stepdad makes a mean kidney dish.
    Fry up chopped onion, add cut up kidneys and *frankfurters* (not sausages), season (dont forget the paprika!), add chopped tomatoes in tomato juice, some red wine and cook for a while.
    I will try to get the exact recipe from him.

    hope i have done that right....the link that is.. uktv has got lots of recipes with kidney although i havent had time to go through and pick out pigs kidney specifically and the search wont recognise that.. keeps asking me if i meant 'pies kidneys',, and certainly the last time i checked, by pie didnt have its own kidneys!!!! not any other than the ones i might have put in there as part of the cooking process as a pose to in the sense of an organ transplant /donation!!!

    I just made a pate with some the other day - melt about 2 tablespoon of butter in the pan (I use unsalted as best flavour - 85p I think from "Mr Ts"). Fry the kidney for a few mins. Whiz up with a hand blender with enough milk until smooth. You can add garlic to the pan when you cook them too, or rosemary. I posted this on Weezl's challenge thread where you might wanna look for some rather interesting offal recipes ;)

    You could also do liver and onions: add diced liver and lots of sliced onion to a casserole dish. Pour over 3/4 pint of made up beef stock. Sprinkle with 1 tablespoon of flour. Cover with a lid or tin foil and pop in a Gas Mark 1 or 2 oven for about 2 1/2 to 3 hours until thickened and cooked through. Lovely with chips!

    Devilled Kidneys

    Recipe says 8 lambs kidneys, but I use 4 pigs sometimes.
    2tbsp wholegrain mustard
    2 tsp worcestershire sauce
    50g butter
    1lb tagliatelle/spaghetti cooked
    salt and pepper
    3tbsp natural yoghurt
    2tbsp chopped parsley (I don't use this)

    Skin kidneys and cut into bite size pieces, cutting out central core.
    Mix mustard with WOrcs sauce.(I don't do this, just add each)
    Add kidneys to heated butter and cook 2 mins till brown.
    Cover and cook overlow heat for 6 mins.
    Add mustard mix to kids and season.
    Stir in yog and parsley and heat for 1 min.
    Drain cooked pasta , pour over kids and serve. MMMMmmm

  • I've just found 4 pig kidneys in the freezer (about the last thing left from the Berkshire pig box).

    Anyone got any more kidney recipes please :confused:

  • Have you got The River Cottage Cookbook Pen? There's a fabulous recipe for kidneys and lentils with chilli (pg 248) It is for lamb's kidneys but I'm sure you could sub pig's.

    500g kidneys, washed and trimmed of gristle etc
    2 tbsp olive oil
    2 finely chopped cloves of garlic
    1-2 small fresh red chillies, finely chopped
    a glass of red wine
    150 ml double cream
    150g green lentils, or Puy lentils cooked (but not mushy)
    1 tbsp chopped fresh parsley
    salt and pepper

    Heat oil and fry garlic for a few secs, add kidneys (you will need to cut pig's kidneys into chunks). Saute for a minute until browned.

    Add chilli and wine. Allow to reduce to about half.

    Add cream plus salt and pepper. Boil to reduce further-about 6-7 mins more.

    Add lentils, mix and heat through for a minute. serve with parsley scattered on top and rice or mash.

    Delia has a good one for kidneys and sherry I think in the Complete Cookery Course. Again it's for lamb's kidneys but I'm sure it will work with pig's. I think they benefit from being soaked in milk to reduce the strong taste.
