Vegetable bake: how do you make yours?

I've googled around for a cheap vegetable bake recipe because my partner loves it and it's cheap and healthy but there's so many ways of doing it! There were recipes using vegetable stock, veg soup, cheese sauce, bechemel sauce...the list goes on!

I did one yesterday. Starting with sauted onion in a little oil, then added chopped carrots and celery for 5 mins. Cornflour and 1/2 pint stock. Added runner beans 5 mins. Then courgettes 5 mins. Added some thawed, frozen cooked beans. Topped with breadcrumb and cheese mix and cooked later in the remoska to crunchy top
That was my first time with this recipe, it was lovely and nice to know you can add whatever veg according to how long it needs to cook0 -
I do a really easy version, i pop the veg i am using in a oven proof dish, put in a tin of chopped tomatoes, top with cheese/breadcrumbs and cook.
How long i cook it for depends on the veg used, as if there is root veg i cook for longer etc. Any left overs can be blended down into soup easily.0 -
Fry onion and veg (I like my carrots added for a bit longer). Add some stock but not too much. Either cover with breadcrumbs and cheese, scone topping, or add some dumplings (dumplings need a little more stock to sit in) and pop in the oven.
Brings back memories, I don't make it anymore as OH won't eat it and I don't have time to cook something else for him!0 -
A nice alternative is to cook the base as suggested above, and make a savoury crumble topping.0
