Storecupboard meal recipes?

Hi all,
I often read on the "What small DFW thing will you do today" the mention of "Storecupboard meals" I presume these are making meals from things everyone tends to have in their cupboards and wondered if anyone had any good recipes as I am a pretty hopeless cook!!!

I am not very good at this, no matter how many years I have watched Ready Steady Cook :-)
The only one I have is Tuna & Sweetcorn Pasta.
For a family of 4
Mix:-
2 cans of Tuna
2 Small cans Sweetcorn
grated cheese
Mayonaise
salt & pepper
Boil some pasta and when soft mix with the other ingredients and serve.
Very quick and fairly cheap, although the price of Tuna has gone up alot recently. These are always in our storecupboard to help me on days where I haven't time to sort out dinner.

Now you see I would end up doing egg and chips tonight but perhaps you can think of something more exciting?!!0 -
I have 2 off the top of my head - Cheesie Bean Pasta and Cheese and Egg Pie.
Cheesie Bean Pasta - Add a tin of baked beans and grated cheese to cooked pasta - let cheese melt. Can be served as is or you can top it with bread crumbs and more cheese and stick in the oven (or a favourite in my house is a topping make up of broken crisps). Very comfort food.
Cheese and Egg Pie - Make up mashed potatoes, add some cooked onion through it (i tend to stick this in the micro for a minute to cook the onions) and put in an over proof dish. Make holes in it and crack eggs into the hole - 1 per person. Cover the top with grated cheese and put in the oven until eggs cooked and topis crispy.£10 per day Challenge (Oct)

If you have LOTS of eggs you could do a Fritata (posh omelette) putting in the red pepper, cooked sliced potatoes, onions into the pan with whisked up egg. and maybe some chips. ???0

What about a chicken lasagne?
Cut chicken into small chunks and cook with onions, green pepper and herbs in tomato pasta sauce
Make white sauce with milk, butter and flour
layer together with lasagne sheets grate some cheese on top
bake in oven for about 40mins at 1800 -

A a previous poster said, it depends on what you have in your cupboard. One of my store cupboard favourites is tinned salmon fish pie. You need a large tin of salmon (the cheaper, pink salmon is fine - last time I bought it it cost about 80 odd pence in Sainsburys), I guess you could use other tinned fish such as tuna if that is what you have. You also need some potatoes, milk, butter or marg, flour, seasonings, I egg, and maybe a few peas, sweetcorn or other veg - leftovers are fine, and maybe a little grated cheese.
Melt 25 g margarine or butter, add 25 g of flour to make a roux, then add milk, heating gently all the while (stir to avoid lumps but if you get them anyway, just whisk and they will disappear), till you get a nice consistency, not too thick, the idea is simply to provide a nice white sauce for the fish, veg and seasonings. Season the sauce with salt and pepper, add the drained, flaked fish, some cooked peas, sweetcorn or whatever else you want to add. If you have some grated cheese, you can add a little of that as well. Sometimes I add a couple of teaspoons of tartare sauce if I have some, and some chopped parsley is nice, too, but really it is up to you exactly what you put in. Put all into an ovenproof dish. For the topping, peel and parboil (about 10 mins) some potatoes, drain and allow to cool a bit. Then coarsley grate the potatoes into a large bowl, season with salt and pepper and mix in a beaten egg. Mix with 2 forks, being careful not to mash the potato together. Pile this mixture carefully on top of the fish, don't flatten down, the idea is to get a rosti effect. Bake in the oven for about 20-25 minutes till the top is brown and crispy. Plenty for 4, and kids seem to enjoy it with some ketchup or baked beans. Adults may prefer salad.
I made this up years ago, so no copyright issues with including the whole recipe, though I did nick and adapt the idea for the rosti topping from somewhere. You can just use mash if you prefer.0 -
And don't forget to look on the Moneysaving old style board for inspiration - they are great and there are folk who can produce food for a day for 50 pence!0
