Tarte au Pomme

Does anyone have a nice recipe for the filling in a tarte au pomme please?
(not tarte tatin or caramel)
There is a video recipe on youtube and the guy used a product called Rich whip as a base http://www.whiptopping.com/products.cfm , I wonder what would be a uk alt product to that? Dream topping maybe?
I am guessing the traditionally made filling is either Frangipan or creme Englaise ?????

A real French classic tarte aux pommes has no filling other than apples. It is the speciality of my neighbour: she makes a very delicate pastry, then covers it with a layer of thinly sliced apples and sprinkles some sugar over it before baking. That's all, and it is delicious!
For a 'Tarte Normande' you cover the base with an egg-yolk, cream and sugar mixture first before you put the apples in - that results in a custardy base."Remember that many of the things you have now you could once only dream of" - Epicurus0 -

I love tarte aux pommes, but have never made it. If you have a look on google there are lots of links to recipes. Like champys I think you may be thinking of tarte Normande.

There is a lot of confusion on the internet about which is which , when I search for the Normandy style apple tart , you get both the Tart Tatin style (just apple and caramel) and the tarte au pomme style with a variety of frangipan style fillings in it.
I have searched some more , I think what the video guy did was made Creme Patisiere for his tarte au pommes, he just substituted milk for that rich whip stuff.
Elizebeth David even gets it wrong, she has a tart tatin recipe for Normandy apple tart , very confusing.0 -
