:rotfl:The trick is to squeeze out all the water from the grated raw potato, as this is what makes it go soggy. Put it into a clean tea-towel of muslin square to squeeze out as much as possible.This advice works, but having done so myself probably 35 yrs ago I have to say make sure you are aware of how new/strong your toweling is -- I literally had a towel burst while squeezing and ended up with 'tater bits all over the kitchen.
