Mushroom, pepper & tomato overload!

Just got back from a proper market shop and ended up with 2kg each of mushrooms, peppers and tomatoes for the bargain price of £2.50 (a stall was flogging wholesale size boxes off).

Good job I am (a) keen on veg and (b) not a bad cook so will quite happily spend the rest of the day in the kitchen as I have a cupboard full of pulses, herbs, spices etc but am struggling for inspiration! Also on a bit of a tight month so don't really want to go out and hunt down expensive ingredients.

Any ideas???

A mushroom pate recipe would be good but all the recipes I can find all involve adding expensive dried mushrooms - theres a thought can I dry mushrooms?

  • I would make soup - tomato and pepper and cream of mushroom and freeze it, or chunk the veg up and freexe it for later use.

    Pizza's springs to mind for me.

    Also a tomato,mushroom and red pepper sauce for pasta.

    I love them all just raw in a salad.

    You could do a chilli - with some minced beef, pork, or even turkey - fry the meat until brown. Remove meat from pan and fry some chopped onions, chop up and add the toms and peppers, add some chilli flakes. Re-add the meat. Cook for about 30 mins. Add worcester sauce, ketchup, brown sauce, salt and pepper during cooking to taste. You could use the mushrooms in this too. You could make quite a batch of this up and freeze in containers.

    You could also make up some tomato sauce to use on pizzas.

    Thank you foreigncorrespondent - I hadn't even thought of soup! Just found a tomato soup receipe on the beeb website so will bung a load with some peppers in the oven to roast now! Perhaps not too many peppers though - they are mostly green and the school girl in me seems to recall red+green=brown, don't know if I'd find brown soup particularly appealing!!

    And also might as well roast some more for a pasta sauce, Rikki!

    Lots of Mushrooms. What to do with them?


    Herb Breaded Whole Mushrooms

    1 pound fresh mushrooms, small
    1/3 cup flour
    1/4 cup dry bread crumbs
    1 1/2 teaspoon salt
    1 teaspoon Italian seasoning
    1 large egg, lightly beaten

    Rinse, pat dry and trim stems of mushrooms; set aside. Combine flour, bread crumbs, salt and Italian seasoning; set aside.

    Dip reserved mushrooms into beaten eggs, then into crumb mixture; toss well to coat. Shake off excess crumbs.

    Heat oil in deep fat fryer to 375F.

    Add mushrooms a few at a time; fry until golden about 3 minutes. Remove mushrooms to paper towels to drain; keep warm. Repeat until all mushrooms are used.

    Serves 4.

    Part of the Furniture 1,000 Posts Name Dropper I've been Money Tipped!
    I would grill the peppers until blackened then skin them and marinade in garlic wine vinegar and olive oil. This will keep at least a month, probably longer and is great in salads or in a sandwich or wrap with cheese. Works best for red and yellow peppers though, green peppers have a thin skin :)

    Good bargain hunting though!

    Try my veggie shepherd's pie recipe - just adjust the quantities of ingredients to use up more peppers, mushrooms and tomatoes. The recipe uses tinned toms so it might be worth putting a couple of tomatoes through a blender and adding some vegetable stock/bouillon and then chopping up the other ones to get the consistency of tinned tomatoes with the flavour of fresh.

    Had a lovely couple of hours turning my kitchen into a small bombsite yesterday and made mushroom stroganoff, veggie curry, tomato soup and veggie samosas (also bought 50 sheets of spring roll pastry in a Chinese supermarket for 70p yesterday, this part of London is awesome for food shopping on a budget - also saves me from the hell that is supermarkets!).

    Today is pepper day - when I get off MSE and bag up yesterdays stuff for the freezer! Also am portioning up some of the veg for friends as my fridge is a tad full:rotfl:
