Joint Of Pork - What to do?

Hi All,
On Saturday I took a joint of pork out of the freezer and defrosted for Sunday roast, however it was too hot and we ended up having salad instead.
The joint is uncooked in my fridge. I have to cook it but don't have time in the week to do a roast. What can I do with it? After it's cooked can I freeze some of it? Could I re-heat some at a later date and use in something like a stirfry?
Any suggestions gratefully received as I can't waste it!

Do you have a slow cooker? Because joints of Pork do well in there!
Or cut it into steak type portions which would then cook quicker?0 -
Wouldn't recommend re-freezing pork, even after cooking. I'd probably slice it up into steak size bits, whack a bit of Cajun spice on & fry them up, do a salad with some balsamic dressing & (may sound awful but tastes divine) some very small cubes of Royal Gala apple in with the salad. yummy (can I come to dinner!!!) & perhaps some chips if you so wish. I do this when it's hot & it's not only tasty, it's filling & very refreshing, but not too bloaty on the tummy!
Only takes about 10 minutes to cook up, salad you must do at the last minute as the apple could go brown (unless it has some balsamic over it then it kind of preserves it).

Yes you can refreeze pork after it's cooked. Do take care to reheat it thoroughly though.

I freeze cooked pork all the time and haven't had any problems.

No slow cooker (yet) and no balsamic vinegar so those idea's out but thank you very much.
