Help with birthday cake?

My daugher is 4 on Sun and even though she really wants a Disney Princess cake I'm making a pink cake at home!
It will be a victoria sponge with pink buttercream topping jewelled with sparkles and dolly mixtures.
Hoe afr in advance can I make it? Was thinking tonight for Sun - will it be dry/sweaty buttercream by then?
Also I don't have a big enough cake tin to store it in - any other suggestions to keep it fresh.

    im making my sons birthday cake next friday evening for his birthday on saturday so i personally am doing night before, once its done it will be loosly wrapped in tin foil as ive also got same problem of no tin big enough

    today is friday so it should be fine for sunday - just make sure you ice it and cover it completely - this will make sure that the cake stays moist. cover with foil and perhaps don't add the candles etc until the day.

    Hiya, The cake will be fine for Sunday if you are icing it.

    Whenever I make a huge cake and can't store it in a tin I put a huge bowl over the top of it as that keeps it safe from fingers poking it! If I am making more than one I use the bowl as a template and make a foil "hat" for one of the cakes!

    Have fun, and the messy buttercream look is very in...

    I've been Money Tipped!
    I'm afraid I don't make normal sponges before the late evening of the day before....I'd personay recommend a genoise sponge instead of the standard sponge, it will keep better.

    Put it in a washing up bowl and clingwrap the top. This is my extra big emergency "cake tin" :D

    Great idea. It'll be fine if you make it tonight and have somewhere airtight (and childproof ;) ) to store it. The chances are most of it will be eaten on the day, and most people usually keep cakes for a couple of days once they've been started (or at least, they try to!).

  • I put toothpicks on the top of the cake and cover in cling film. Then when you uncover it, insert the candles in where the toothpicks were. (Toothpick holes don't really show anyways, especially on cakes with lots of sparkles and things).
