I've kept the chicken carcass - now what?

  • A simple, quick and easy recipe for chicken soup, using a leftover chicken carcass. A basic broth can be made with just the chicken, water, onion and pepper.

    CHICKEN SOUP

    4 servings

    INGREDIENTS

    1 onion
    At least 2 additional vegetables (see below)
    1 roast chicken carcass
    1 litre of water
    1 chicken stock cube
    1 teaspoon of any herb
    Ground pepper to taste

    METHOD

    Peel the onion and chop it into big pieces. Peel the other vegetables, if required, and chop them into 2cm (1 inch) pieces.

    Put the chicken, vegetables, water, stock cube and herb into a large saucepan on a medium heat. Stir thoroughly. Bring to the boil, then turn down the heat until it is just boiling (simmering).

    Put the lid on and cook for an hour. Check the liquid level from time to time and top up if it starts to dry out.

    Fish out the carcass and put it on a plate. Remove any meat which is still on the bones, Put the meat back into the soup. Discard the bones.

    If you have a food processor, put the soup in it and blend it to the desired consistency. If you have a hand blender, put it in the soup and blend it to the desired consistency. If you don’t have a food processor or hand blender, use a potato masher, press the soup through a sieve with the back of a spoon, or leave it lumpy.

    Season with the pepper.

    ADDITIONS & ALTERNATIVES

    You an use carrots, celery, courgettes, leeks, mushrooms, tomatoes, parsnips, potatoes, swedes, turnips, etc. Using green vegetables and mushrooms will give a light and delicate broth. Using root vegetables and tomatoes will give a thick and hearty soup.

    Sage would seem to be a good herb to use. After all, sage and onion does go with chicken.

    For Chicken Noodle Soup, use green vegetables, and add a small pack of noodles.

    Hiall. Just roasting a chicken carcass in the oven to make stock.

    Whats the longest i could leave the veg and chicken soup in the sc on low? is 9 hours ok?

    Yes, nine hours will be fine. I usually leave it on for eight hours on medium or high.

    Thanks Pink, also following your carcass tips, so it will be pink soup (altough i hope not literally!) :eek:

    i made 3 portions of pasta sauce with chicken for freezer, and 3 portions of cous cous for the fridge, and a portion of coronation chicken. How long will these keep in fridge if chicken was cooked today?

    Benn cooking so long today if orgot to make myslf dinner:eek:

    I still have 300g of chicken left and don't know how best to use it as chicken is quite the luxury for me. Must go threadhunting.

    Also i cooked pack of spinach i had and was going to add it to chicken and veg soup but now im not so sure. WIll it be a stong taste? Im going for irish chicken and veg trad type soup

    You've achieved a lot today! I hope your soup doesn't turn pink! :D I live quite near to you so I think the soup you are talking about has soup veg and soup mix and is known locally as broth? If it is I don't think I'd risk adding spinach. This is how I make mine...it works just the same, if not better, n the slow cooker.

    My rule of thumb for keeping chicken in the fridge is three days maximum but you can read other people's views here: How long does cooked chicken keep for?

    You could use the remaining chicken to make a pie or use it with the spinach in a white sauce to make a savoury pancake filling. There are lots more ideas on this thread : Rubber Chicken

    yes typical irish type soup with dried soup veg stuff and stuff. Today ive tucked away all that, and i baked some potatoes to crisp up on tues. Good call on the spinach, just making spinach lentil and potato soup, so lets see how that turns out!

    Have froze two pizza size portions of chicken so from one chicken so far ive got 9 meals out of it, plus theers probably going to be 4-5 portions of soup so im doing well . I used to just take the obvious ibts and throw the carcass out :eek:

    Good idea on the pie, how much roughly woul you put in a pie? i wont be eating that in the next few days so seems more sensible to freeze some pie size portions. I kept 60g for a pizza which was loads but nice luxury for me :o

    Hi, sorry to revive an old thread but can you use a chicken carcass that has been cooked in a slow cooker.

    I understand this could work if using a roasted chicken as there's plenty left on it, but after slow cooking a chicken today it looks like its been stripped already and won't yield much from making a stock.

    Has anyone made stock from a chicken cooked in the slow cooker?

    I don't cook my chicken in the slow cooker but I do however put the carcass in the slow cooker for about 10 hours with water to make stock. I would imagine there will still be enough flavour in the bones for stock.
