impressive desserts that freeze well!

I'm trying to build up a collection of recipes for desserts that look and taste good and that can be made ahead and frozen.

I've tried and tested Delia's Chocolate Truffle Torte which freezes well.

All ideas gratefully accepted!

  • Look up Nigella's London cheesecake - it freezes well and you can try all sorts of flavours. White choc and Baileys is great.

    Icecreams and sorbets are the obvious candidates, Nigella Lawson has a recipe for a Honey Semifreddo which is sort of like ice cream but without all the tedious whisking every few hours to break up the ice crystals, tastes lovely!

    Thanks! Do you add melted white chocolate to the mix before cooking, grate over the top or spread melted over the base before adding the mix? What sort of quantities of Baileys and chocolate?
  • You can do it any which way you like. I slosh in maybe three shots of Baileys to the egg mix, then grate white chocolate over the top as soon as it comes out of the oven.

    Fresh whole blueberries, halved, also go in really well. So does aboutn half a cup of elderflower cordial. I made a gorgeous ginger and whisky soaked fruit one for Christmas - rich but wonderful! I also like to top it with sliced strawberries and drizzle over melted choc - as you can tell, I like cheesecake, hehe.
