Help please - soggy 'frozen' sandwiches!

Hi all :)

I executed a brilliant plan to minimise cooking during the school holidays.

I spent a few days cooking endless (30!) family meals for the freezer, along with loads of sandwiches for DH's packed lunches that also went into the freezer for daily selection. I was very pleased with myself. (Fingers crossed we don't get a long power cut :D)

Alas on day one he came home, enquired as to whether his sandwich had been frozen (astute!) and mentioned (not complained) that it was slightly damp at lunchtime. As someone who has never been on MSE,but knowing I'm a big fan, he then suggested I asked my Old Style friends for any suggestions! :T

So any ideas? As I get his sandwich out at bedtime and put it in the fridge overnight, I have thought about changing the cling film either when I take it out or (he could do it) first thing in the morning?

    As your post has drifted down to page 2 without an answer I shall have a go - not that I have frozen sandwiches for years!

    I wonder if it is the cling film not allowing moisture to escape that is making the sandwich soggy? Perhaps transferring to a box without cling film will allow the bread to breathe a bit. You might need to experiment as to whether to do it the evening before or in the morning before setting off.

    Im starting the frozen sandwiches from next week. I read on one of the posts to take them out in the morning then they are defrosted & chilled from lunch..may stop them going into the wet stage?

    maybe turn the temp up in the fridge???
    this happened to me.....and I nearly bought a new fridge because of it, until my dad suggested i turn the temp of the fridge up!!!

  • I'm wondering if it might depend on what filling you use, maybe some fillings are more likely to go soggy than others.
    I would agree with taking them out the freezer in the morning and removing the cling film.

    When I get up at 6.30am, I get either a bap or two slices of bread out of the freezer, go on the computer and then, by 7am, the bread is defrosted. Takes me about a minute to make the sandwich.I've had no complaints from a very faddy eater who notices the difference between Asda and Tesco baps.

    I once tried freezing bottled water,but it hadn't defrosted by lunchtime...but I digress.
