You could make macaroni cheese or cheesy vegetable bake (like macaroni, but with veg!),
Bean crumble (Kidney & borlotti beans, tin of tomatoes, butter and flour)
Lentil/Yellow Split Pea soup with the half-baked rolls ()
    Pearl Barley 'risotto'
Onion and Potato Bake (if you get potatoes :p)
Sweet and Sour Chicken/Chicken Nuggets (with the breadcrumbs) and chips/Chicken and Pasta Bake (with the mushroom soup).

That's all that comes to mind at the moment, HTH :)

    How many are you feeding?

If it is just 1-2 here are a few ideas....
Use 1 chicken breast and have sweet n sour chicken with rice
If you buy mince use half for Spag bol (bulk out with lentils)
Use other half for sheperds pie (Bulk out with beans or lentils or maybe both)
You could even stretch the mince to 3 meals if you bulk it out enough with lentils or beans... I buy tesco value mince and that gives me 3 meals for myself, OH & DS
If you buy potatos make cheese and potato pie Serve with spaghetti numbers
    Lentil soup
Use mushroom soup has a sauce for pasta
Or you could cook with a chicken breast and have it with rice ( a bit like chicken supreme)
If you buy eggs...Omelette... Scrambled, Poached or hard boiled eggs on toast
Cheese and onion quiche served with Jacket spuds
    Jacket spuds with beans/cheese
Use half baked rolls for pizza bread

Thats all I can think of for now.... Good luck :)

lentil curry, boil lentils with the curry spices/powder [amount to taste]with added extras like chopped onion or carrots or peas. takes about 30 mins. served with boiled rice
the quiche, line a flan dish or tin with shortcrust pastry, mix about half pint of milk with 2 eggs, seasoning,as much grated cheese and finely diced onion as you want. saute the onion first until its soft and translucent but not browned. cook for 30 mins at 180cecius.

This recipe is by ‘Turtle’, not me. I just added the suggestions at the end.

    CHILLI BEAN SOUP

Serves 3 to 4 (So you can freeze some for later)

    INGREDIENTS

    1 onion
    1 tablespoon of olive oil
    400g tin of tomatoes
400g tin of red kidney beans
    1 teaspoon of chilli powder
    1 vegetable stock cube
    250ml of water

    SPECIAL EQUIPMENT

    Hand-held blender

    METHOD

Peel the onion and chop it into tiny pieces.

Put the oil into a saucepan on a medium heat. Add the onion. Fry the onion for about 5 minutes. Stir frequently to stop it sticking.

Open the tin of tomatoes. Add the tomatoes to the pan. Open the tin of beans and drain off the liquid. Add the beans to the pan. Crumble the stock cube into the water and pour it into the pan. Mix thoroughly. Continue to cook for another 10 minutes.

    Blend to the desired consistency.

Add the chilli. Continue to cook for another couple of minutes.

    ADDITIONS & ALTERNATIVES

Remove some of the beans before blending and put them back in afterwards. Add 1 teaspoon of ground cumin at the same time as the chilli. Use other tinned beans, like borlotti, cannellini or mixed beans.

    TIPS

If you are worried about any ‘side effects’ from the beans, add some parsley (either a tablespoon of dried parsley at the same time as the beans, or a small bunch of fresh parsley before blending), which is said to help with these.

PS. If we really have only got 1 onion to play with, I reckon that this might just work without it.
