chicken stroganoff?

Hi all, have lots of lovely leftover chicken and OH wants a stroganoff.
What do I need in it? I presume mushrooms onions paprika? Also only have creme fraiche no sour cream (or regular cream) is that OK?
Does anyone have a failsafe recipe?

    Hiya :)

    You can use creme fraiche, but it won't be as good, IMO, you'll lose the thick-creaminess that you would get with, erm :rolleyes2, cream. You'll also need some garlic.

    This is slightly different to what I normally do, because you'll be using cooked, leftover chicken and creme fraiche.

    Cook your onions until nice and soft.
    Add the chicken and sliced mushrooms to the pan with some garlic (either a clove or some puree) and paprika, mix it all together and add the cream/creme fraiche. Cook until the creme fraiche is nice and hot.
    Taste for seasoning and serve.

    Creme Fraiche should be ok just add a little lemon juice to sour it, here is the recipe I use ;

    225g long grain rice
    500g quick-frying beef steaks, cut into thin strips
    1 tsp mixed peppercorns, crushed
    1 tbsp olive oil
    1 onion, finely sliced
    150g closed cup mushrooms, wiped and halved
    284ml carton soured cream
    2 tsp paprika


    1.
    Cook the rice according to packet instructions. Meanwhile, put the chicken strips into a shallow dish, add the crushed peppercorns and toss to coat. Set aside.

    2. Heat the olive oil in a large frying pan over a medium heat and cook the sliced onion for 3-4 minutes or until soft but not coloured.
    3. Add the mushrooms and cook for a further 5 minutes. Increase the heat, add the chicken strips and fry for 4-5 minutes or until the juices have evaporated and the meat is cooked. Add 3 tablespoons water and bubble to deglaze the pan.
    4. Stir in most of the soured cream and half the paprika, and gently heat until warmed through. Check the seasoning.
    5. Spoon thechicken stroganoff onto plates. Top with the remaining soured cream. Season with the remaining paprika and black pepper and serve with the rice.

    This is one of my favourites - and if you are that way inclined it's weight watchers! (well slightly adapted)

    Slice 2-3 onions, and 500g of mushrooms
    Fry lightly for 15mins
    Add 130ml of chicken stock, cover and simmer for 15 mins
    Add 2tblsp of brandy and 1-2 tblesp of worseter (sp) sauce.
    Add in cooked chicken and simmer until chicken is cooked through.
    Stir in creme fraiche
    Serve with rice

    I also like to make this into a pie with a potoato topping instead of the rice

    wow thanks all for quick replies
    Have some garlic in the garden so thats not a problem, no brandy though for the weightwatchers version :(
    all sound yum so reckon OH will get his own way re dinner tonight :D

    Oh I forgot the 2 cloves of garlic to be added to the onions and mushrooms! Whoops!
