Recipe for French Toast

DD2 is 15 tomoroow (how did that happen so quickly :confused: ) and as they always choose their birthday breakfast has decided she would like French Toast.

Does anyone have a lovely light recipe as when I've made it in the past it always seems a bit 'heavy'. We're laso trying to eat a bit more healthily so if there is something with a bit of fruit or something with it that would be great:D

    I add a little cinnamon to the eggs too.

    It seems to me its heavier if the pan isn't hot enough when the bread goes in...and yes, whisk the eggs well!

    Although its too late now, for ultra light french toast an ultralight texture bread helps too. :)

    4 eggs, 240ml milk and 1 Tbsp sugar

    I used this recipe and whisked my eggs, added a little cinnamon and cooked it in my griddle and served drizzeld in maple syrup. Result - one very happy 15 yo DD this morning (not to mention DS and OH!):D
