cake advice

Hi there!

I am getting married next Friday - a relatively money-saving affair (of course!). We are having our "cake moment" after the evening food (BBQ) - a friend is going to bring her "choco-mobile", some kind of chocolate wagon with fondue, fruit etc.

Anyway, we have been wondering what to do for the drinks reception in the late afternoon and just concluded that I would make some cakes. We're in Holland and it's pretty dutch to have coffee and cake at this moment, and I'm pretty sure that I've got a couple of free days to do some baking. I've also got some OS style/good cook friends who can help. As I said, the cakes don't have to be big/posh ones, just normal.
OK, so probably some of you think I'm insane, but a few questions anyway!

How many normal size cakes for around 80 people and 10 children?

I've got lots of time on the Wednesday (wedding on Friday), but it would be good to make some before. Does anyone have a recipe that can be made a little in advance (maybe a fruit cake?)

And of course any ideas - I was thinking, lemon, chocolate, carrot, fruit??? (Not together of course!:rolleyes: )

    Congratulations :beer: I make a cake with 200g of each ingredient, and that makes 10 servings ;) Try these threads:

    Lemon drizzle cake

    Carrot cake

    Fruit cake

    Chocolate cake

  • Banana bread (this is like the one we make http://allrecipes.com/Recipe/Banana-Banana-Bread/Detail.aspx) and carrot cake (http://www.veg-world.com/recipes/carrot-cake.htm) done in a loaf tin go down very well at our parties as do victoria sandwiches (Be-ro site)

    There are lots of recipe variations if you google I like cakes in loaf tins as they are easy to slice and a nice compact shape to store the carrot and banana ckes freeze well if needs be

    How long does a cake keep on average?? Under normal circumstances my cakes don't usually stay around long enough to find out!

    Loaves is a great idea - I have a rubber loaf tin too!

    I think I will ask my Mum as well - she has a recipe for a fruit loaf where you soak the raisins in tea I think, it's very tasty and keeps awhile too!
