Anyone got Fearnley-Whittingstall's River Cottage Meat Book - pig's brain recipe?

Cheeky question,:o has anyone got Hugh Fearnley-Whittingstall's meat cook book, and if you have, would you be a star and let me know his pig's brain recipe?:D
I'm collecting mine today, and the internet isn't revealing many yummy sounding recipies.

Hi there :j As HFW points out, it's currnetly only legal to sell pigs' brains, and the only practical way of getting them is to get a whole head and extract yourself

Hello again! You're probably out with the pig atm, so I'll assume this is the sort of thing that you're after (adapted so as not to breach copyright
).
Cut the brain into large chunks and cover in seasoned flour mixed with chopped fresh sage. Fry in olive oil, turning regularly, until crisp and golden brown. Remove from the oil and add more fresh sage leaves and crisp them.
HFW says this is one of his all-time favourites :j
