Frozen double cream

I while back froze a tub of doube cream before it went past its date. After reading through some ice cream recipes I would love to make some of my own, I have alergies which mean I cannot eat processed food, so I would love to learn to make my own, as im restriceted to Mackays vanilla (£££) on the ice cream front, id be able to add flavors this way!.

Would it be possible to defrost the double cream, heat with sugar etc to make ice cream mixture, then freeze in my freezer?

Im abit weary due to the double freezing!?

    Personally I wouldn't risk it - food should be heated to boiling point and kept there for at least 5 mins to kill any lurgies, doing this to icecream wouldn't help the texture?
