Help me make something out of my cheap buys!

OK, I have:
2 small green peppers
onions
some double cream
chicken
rice/pasta/cous cous/potatoes
grated cheese (I grated it all, didn't buy it grated!)
plum tomatoes
2 courgettes
frozen sweetcorn

What tasty and exciting thing can I make out of that little lot? I have spices and herbs too, and stock and stuff like that in the cupboard. Also a glut of tuna as it was on offer!!

All ideas for recipes gratefully received.

A variation of Delia Smith's Moroccan stuffed peppers perhaps?

I'd go for either a chicken and pasta bake, or a tuna and pasta bake - but that's pretty boring :o

not very good at exciting meals me

You could do stuffed pepper and stuffed courgettes, and fill with same filling.
Cut peppers in half lengthways and deseed. Cut courgettes in half lengthways and scoop out flesh. Save the flesh and chop up. Defrost sweetcorn.
Finely dice onion, saute until soft in oil/marg or butter, add chopped courgette flesh and saute for another few mins, adding a wee bit of garlic if liked at this stage. You could add herbs or/and spices, whatever you fancy, bit of chilli if you fancy it spiced up a bit, dig up in your store cupboard, and see what you have. Add sweetcorn and possible some chopped tomatoes.
Make up either rice or couscous. Mix in with onion, courgette mix. Stuff vegetables, bung in oven for about 20 mins, I would use gas mark 6, take out, top with grated cheese and return to oven for about another 10 mins.
Possibly have a baked potato or make potato wedges with that if you like quite a big meal, otherwise you could serve with crusty bread.
If you have any extra stuffing left, you can always freeze it for another meal.

p.s. If tomatoes are decent enough size, you can also stuff them, scoop out centre and add to stuffing mix. Waste not and all that!
