Cooking Beans in a Slow Cooker

I have at last got a slow cooker. Because I didn't have one before I didn't read the slow cooker threads very well.

Now, here's the thing ... Can I cook cannellini beans in my new slow cooker?

    Yes! Brilliant for puses as it doesn't "explde" them by over boiling.

    Assuming you mean from dried beans?

    Soak overnight.Change water.

    10 min rapid boil (esp for kidney beans) then into the slow cook with another change of water (not absolutely needed but helps to give les scum I find) and cook till done- this will depend on the slow cooker and also how fresh you beans are very old dried beans take a long time- but are fine so don't go worrying about "use by" dates- dried beans are real old fashioned sore cupboard fare.

    Oh, no salt either till you add them to what ever you are using them in.

    Bulk cook and freeze beans works fine too.

    I especially use chickpeas as they cook so nicely and don't mush, but butter beans are lovely as long as you keep an eye as they will mush given any excuse:rotfl:

    I'm sure that you can. I would presoak them the recommended amount of time first - probably overnight for at least 10 hours (never used them myself).

    Apparently Cannellini beans need more cooking time than most other types of bean and also need plenty of water - so they should be great in a SC. I think I would make sure that I brought them to the boil in a saucepan before adding to the SC and it would be best if the liquid already in the SC was well heated (or pre-boiled) before the beans were added.
