hi all, i've just made my first ever swiss roll and while it tastes delicious it cracked when i rolled it. have i left a step out or overcooked it? can anyone help?
it was lovely especially because i found some homemade apple and ginger jam a friend had given me ages ago. i used this a filling but i'd love to know how to sytop it cracking.

Sorry don't have an answer but wondered where you found how to do this? Thinki the kids would love to have a go at this at the weekend;)

Did you cover the sponge in a damp tea-towel while it cooled? This helps to keep the 'crust' moist until it has been rolled. However- even this is not always completely fool proof...0

yes i got the recipe from a really old good housekeeping book. i'm just learning to bake with the help of a friend who comes over to hold my hand while i make a mess of things.
i did use a damp tea towel and followed the recipe to the letter. so i dont know what to do next time?
i used 3 eggs and 3 oz caster sugar whisked really well till thickened, then added flour and drop of water cooked for 15 mins and that was that.
i hope our next venture of american style cherry and choco chip cookies turn out better.

Don't be disheartened babybe11 . U will learn by your mistakes and find ur own way of doing things. I make fairy cakes that often with the kids I don't even need to read the reciepe book:rotfl: . However, I think I still suprise people,even my mum on my baking. Xmas 2007 the family came for dinner as many of us don't like xmas pud I made chocolate sponge cake, my mum nearly fell off her chair when I said I'd made it.
