Orzotto with something other than mushrooms?

A while ago I had the most delicious pearl barley risotto with mushrooms. Apparently a pearl barley risotto is called orzotto. I rushed out and bought myself a packet of pearl barley, meaning to recreate it, but the only recipes I can find are for orzotto with mushrooms, and my husband hates mushrooms. Meanwhile, I'm trying to eat my way through our store cupboards before we move house. Now, I could wait till he goes away on holiday and then invite lots of people round for a mushroom fest (actually, this really sounds like a pretty good idea!) or I could try and cook an orzotto with some other kind of veg. So the question is - does anyone have a recipe for orzotto?

I've seen them called Barlotto

I use pearl barley to stuff peppers instead of using rice and it's lovely.
